Suggestions to prepare a real Italian pasta with wild boar ragù:
- Use spaghetti, linguine or pappardelle of high quality
- Cook the pasta in slightly salted boiling water for 2 minutes less than indicated on the package
- Pour the sauce in a medium size frying pan with 3 tables spoons of Italian extra virgin olive oil (EVO)
- Time your pasta cooking with a stop watch, when there are 2 minutes to go heat up the EVO oil (don’t burn it) add the sauce from the jar and stirr with the EVO oil. The EVO oil will add the fresh flavour of the fruity Italian olives and smoothness
- Take the pasta out of the water or pour it into a colander but save half a glass of cooking water (very important)
- Put the pasta into the pan and add the half glass of cooking water.
- Stir the pasta with the sauce and water on medium heat for 1 minute
- That’s it. Pour the pasta on to the serving plates.
